My parents and brother were born in Chile and migrated to the states in 1978 not knowing a word of English. My grandmother moved too and pretty much took care of my brother and I while my parents worked and attended the university.
My grandmother was some lady. I have stories for days but the one I'd like to share with you today is about her cooking. I had no idea how lucky I was as a kid. The cuisine I had at my disposal day in and day out. My grandmother would cook for the family everyday. Now that I'm a mother and have to cook, I really appreciate the lady and her cooking that much more.
We'd feast on dishes like charquican, which is the Chilean version of beef stew; empanadas, sopaipilla, cazuela. These are just a few of Chile's known staples and they are divine.
I miss my grandmother. The older I get the more I understand why she was so crazy for us. She loved us and was our soldier. To pay homage to the lady, I'm listing the platters along with links to recipes she used make for us. Hope you enjoy them as much as I did.

PASTEL DE CHOCLO
Choclo is Spanish for Corn. We use sweet corn and mash it into a paste. This dish resembles the shepherd's pie. Or as the Greeks would call it mousaka. So it also contains ground beef, onions, raisins and other seasonings. One of my favorites.

Charquican is Chile's version of beef stew. Very popular South American dish. A nice hearty meal for the soul. There's a mix of vegetables, potatoes and beef. This recipe from Singer's Kitchen is the closest to Grandmas's recipe. So delish! IT even comes with a bonus salad recipe too.

Ahhhh sopaipillas. How do I love thee?
To me sopaipilla is like the equivalent of an Italian zeppole. But I have seen it eaten as a savoury dish as well.

Okay my mouth is pretty much watering at this point. I've eaten all types of empanadas from different cultures, but never quite like these. Along with the the ground beef mix you'll also see boiled egg, black olives, and raisins. These beef patties are a party in your mouth.
